Excellent. I made this once as written, but I thought the texture of the chicken kind of disappeared into the texture of the bulgur. The next time I replaced the chicken with 2 (15 oz) cans of chickpeas and it was so much better. Also I used 50% less fat French feta and used twice as much. Extra parsley is really good with this also. Brought it to a potluck and it got RAVES!

I love this recipe. Thinking of attempting a Mexican version next. It does make a LOT, though; I often halve it or take some to a friend. Great for picnics!

This is my favorite summertime party recipe when cooking for a crowd. It's easy and feeds so many! If you've got vegetarians on your party list, just keep the chicken separate and let carnivores add it themselves.

I used veggie chicken and reduced fat feta. Simple and delicious!
