1/2 teaspoon ground cumin
3 cups grated carrot
1/4 cup golden raisins
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh cilantro
3 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
2 teaspoons olive oil
1/4 teaspoon salt
How to Make It
Place cumin in a small skillet. Cook over medium heat 2 minutes or until toasted and fragrant, stirring frequently.
Combine cumin and remaining ingredients in a bowl. Cover and chill.
