A teaspoon of honey neutralizes the bitterness of grapefruit and gives a tangy sweetness to Grapefruit-Poppy Seed Vinaigrette.

3 tablespoons fresh grapefruit juice
4 teaspoons canola mayonnaise
2 teaspoons white wine vinegar
1 teaspoon honey
1/2 teaspoon grated grapefruit rind
2 tablespoons grapeseed oil
1/2 teaspoon poppy seeds
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
Combine grapefruit juice, canola mayonnaise, vinegar, honey, and grapefruit rind in a bowl, stirring with a whisk. Gradually add grapeseed oil, stirring constantly with a whisk. Stir in poppy seeds, salt, and pepper. Drizzle over baby spinach.
