  • 1/3 cup grapefruit juice
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 packet calorie-free sweetener with aspartame (such as Equal packets)
  • 4 cups mixed salad greens
  • 2 large pink grapefruit, peeled and sectioned
  • 1 green onion, thinly sliced


  1. Combine first 6 ingredients in a small bowl; set aside.
  2. Place 1 cup salad greens on each of 4 plates. Arrange grapefruit sections evenly over greens, and sprinkle evenly with green onions. Stir juice mixture until well blended; spoon dressing over salads.
  3. Tip: Section the grapefruit over a bowl, then use the juice to make the dressing for this salad.
