Ingredients
- 1/3 cup grapefruit juice
- 2 tablespoons white wine vinegar
- 1/2 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 packet calorie-free sweetener with aspartame (such as Equal packets)
- 4 cups mixed salad greens
- 2 large pink grapefruit, peeled and sectioned
- 1 green onion, thinly sliced
Preparation
- Combine first 6 ingredients in a small bowl; set aside.
- Place 1 cup salad greens on each of 4 plates. Arrange grapefruit sections evenly over greens, and sprinkle evenly with green onions. Stir juice mixture until well blended; spoon dressing over salads.
- Tip: Section the grapefruit over a bowl, then use the juice to make the dressing for this salad.
