  • 2 large grapefruit
  • 1 cup thinly sliced red onion
  • 1 1/2 teaspoons fresh or 1/2 teaspoon dried thyme
  • 1/4 cup seasoned rice vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon fennel seeds
  • 1/4 teaspoon salt
  • 6 cups gourmet salad greens

How to Make It

  1. Peel and section grapefruit to get 1 1/2 cups sections, reserving 2 tablespoons grapefruit juice. Combine grapefruit, onion, and thyme in a large bowl.

  2. Combine reserved grapefruit juice, vinegar, and next 4 ingredients; stir well with a whisk.

  3. Add salad greens and dressing mixture to grapefruit mixture; toss well. Serve immediately.
