Grandmother Elizabeth's Jelly Cookies
- 1/2 pound salted butter softened
- 1/2 cup sugar
- 2 egg yolks at room temperature
- 2 cups all purpose flour
- gourmet starwberry jam
- small cookie scoop or spoon thimble
- Cream well butter and sugar until smooth. Add egg yolks. Mix until well blended. Slowly add 2 cups of flour mixing continually until blended. Form cookie balls the size of a walnut using a cookie scoop or spoon. Place on an ungreased cookie sheet about 1 1/2 inches apart. Dent in the center of each ball using a thimble dipped in flour to avoid sticking. Be careful not to go through to the cookie pan but just enough to be able to fill the center of the ball. Fill centers with strawberry jam. Bake in the oven at 350 degrees 1517 minutes or until edges begin to brown.
