I had this recipe in an old Southern Living Cookbook from the 80's which was lost upon moving. The recipe I missed the most was Grandma's Chew Bread. It is so simple, yet yields many compliments. I never took these anywhere and had leftovers to take home.
Grandma's Chew Bread
Yield: about 3 dozen
- 1 (16-ounce) package light brown sugar
- 4 eggs
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- Combine sugar and eggs in a heavy saucepan, stirring well; cook over medium heat, stirring constantly, until sugar dissolves. Remove from heat. Add remaining ingredients, stirring mixture well.
- Spoon mixture into a greased and floured 15- x 10- x 1-inch jellyroll pan. Bake at 400° for 15 minutes or until golden brown. Cool, and cut into squares.
