Put milk on to scald (but not boil), add sugar to milk. Beat egg yolks. Put a small amount of hot milk in egg yolks (so it won't curdle), then add yolks to milk. Make a flour or cornstarch thickening with milk. Put in hot milk and cook for a few minutes until thick. Put in salt and vanilla and butter.
Beat egg whites with a tablespoon of sugar per egg. Take graham crackers and crumble. Add butter to moisten to make a crust. 1/4 cube butter. Put hot mixture in crust and top with the meringue. Sprinkle some crumbled graham crakers on meringue. Bake at 350° until golden brown.
