- 6 ripe pears
- 1/2 cup lemon juice, divided
- 3 cups sugar
- 3 cups water
- 4 ounces Gorgonzola cheese
- 1/2 cup unsalted butter, softened
How to Make It
Peel pears; remove core from bottom, leaving stem intact. Slice 1/4 inch from bottom of each pear, and brush pears with 1/4 cup lemon juice.
Combine sugar, water, and remaining lemon juice in a Dutch oven; bring to a boil. Place pears upright in Dutch oven; spoon syrup over pears. Reduce heat; cover and simmer 15 minutes or until tender. Let pears cool in syrup.
Combine cheese and butter; beat well. Fill pears with cheese mixture; chill. Cut in 1/2-inch thick slices to serve.
