Golden Sweet Cornbread

This is definitely a sweet cornbread. I usually serve with honey butter.

Ingredients

  • 1 cup flour
  • 1 cup yellow cornmeal
  • 1/2 cup sugar
  • 1 tsp salt
  • 3 1/2 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup veg. oil

Preparation

  1. 1. Preheat oven to 400 degrees F. Spray muffin tins with Pam.

  2. 2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder.

  3. 3. Lightly beat egg and add to milk and oil. Pour wet ingredients into dry and mix til just combined. Let the mixture sit for about 3 minutes.

  4. 4. Spoon into muffin tins and bake in preheated oven for about 2025 minutes.

  5. 5. While nice and hot, spread with honey butter (Just combine about 2 Tbsp of honey with 1 stick of softened butter.)
