Ingredients
- 1/2 cup golden raisins
- 1/2 cup Riesling or other slightly sweet white wine
- 1/3 cup sugar
- 1 1/2 teaspoons grated peeled fresh ginger
- 1 (1-inch) julienne-cut lemon rind
- 1 (3-inch) cinnamon stick
- 1 1/2 cups (1-inch) cubed fresh pineapple
- 1 1/2 cups chopped peeled Golden Delicious apple (about 2 apples)
- 2 teaspoons cornstarch
- 2 teaspoons water
Preparation
- Combine first 6 ingredients in a large saucepan over medium-high heat; add pineapple and apple. Bring to a boil; reduce heat, and simmer 10 minutes or until apples are soft. Remove from heat. Cover, and let stand 15 minutes. Remove lemon rind and cinnamon stick. Return fruit mixture to a simmer. Combine cornstarch and water; stir into fruit mixture. Cook until slightly thick (about 4 minutes).
