Super easy and quick to make. Big hit in my family because we do not like super cheesy greasy casseroles and many of the breakfast casseroles with bacon and sausage are too salty and greasy for us. This one is perfect. I also added red pepper for color and taste. You may add more cheese if you like cheesy but the recipe is great just the way it is. It did take a bit longer to cook than the 65 minutes, it took about 1 hour and 20 minutes. Best to let it set for a while on top the stove before you serve to allow it to set up and easier to serve.

Gooseberry Patch
Warm and hearty Golden Hashbrown Casserole is an easy entree for your next breakfast or brunch.
Yield: Makes 10 to 12 servings

Ingredients
- 6 eggs, beaten
- 1 12-oz. can evaporated milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 30-oz. pkg. frozen shredded hashbrowns
- 1 8-oz. pkg. shredded Cheddar cheese
- 1 onion, chopped
- 1 green pepper, chopped
- 1 cup cooked ham, diced
Preparation
- Whisk eggs, milk, salt and pepper in a large bowl. Add remaining ingredients; mix well. Pour mixture into a greased 13"x9" baking pan. Bake, uncovered, at 350 degrees for 60 to 65 minutes, or until eggs are set.
