Goat Cheese Polenta with Sautéed Kale

    This was delicious -- perfect for a simple "meatless Monday" meal. I don't think the goat cheese in the polenta added anything. Next time, I'd just omit it in the polenta and sprinkle some extra cheese on top of the finished dish. Don't leave out the toasted pine nuts, they really added to the flavor and texture of the dish. We'll be making this one again.

    I love the idea of a creamy polenta--but not so much an eggy one. I skipped the egg and goat cheese, just mixed in 3 oz of cream cheese with the thyme, polenta, salt, and pepper. And a quicker version of the kale topping. A kale salad with tomatoes and green onions, with a balsamic vinaigrette. Thanks for the great idea.

    Love polenta. Skipped the cream cheese and used 4oz Trader Joe's garlic & herb goat cheese (less sodium than cream cheese). Added chopped red and orange bell peppers (OK, and half a jalapeno) for color and flavor because I'm going to be slicing and frying the leftovers. I don't do kale. ever.
