Goat Cheese Crostini
This recipe goes with Roasted Chicken Salad with Goat Cheese Crostini
Yield: 4 slices.
- 2 ounces goat cheese
- 1 tablespoon minced fresh tarragon
- 1/2 teaspoon freshly ground pepper
- 4 (3/4-inch-thick) baguette slices, toasted
- Combine first 3 ingredients in a small bowl; mash well with a fork. Spread mixture evenly on slices of bread, and broil 3 inches from heat (with electric oven door partially opened) 1 minute or until thoroughly heated.
