Goat Cheese and Basil Polenta

Serves 4 (serving size: 3/4 cup)

This delicious polenta dish has a texture similar to grits or mashed potatoes. The goat cheese gives it a slightly tart and extra creamy taste.


  • 3 cups water
  • 1 cup dry polenta
  • 3 ounces goat cheese
  • 1 tablespoon chopped fresh basil
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt

How to Make It

  1. Bring water to a boil in a medium saucepan. Gradually add polenta, stirring constantly with a whisk. Reduce heat to low; cook 7 minutes, stirring occasionally. Remove from heat; stir in goat cheese, basil, pepper, and salt.
