This delicious polenta dish has a texture similar to grits or mashed potatoes. The goat cheese gives it a slightly tart and extra creamy taste.
3 cups water
1 cup dry polenta
3 ounces goat cheese
1 tablespoon chopped fresh basil
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
How to Make It
Bring water to a boil in a medium saucepan. Gradually add polenta, stirring constantly with a whisk. Reduce heat to low; cook 7 minutes, stirring occasionally. Remove from heat; stir in goat cheese, basil, pepper, and salt.
Speaking as someone who isn't a huge fan of polenta in general, I really liked the flavors of this side dish. The consistency came out a little dry/clumpy but I think that is because I let it sit while I plated the rest of the meal instead of serving immediately.
