Gnocchi with Sausage and Spinach

    Worthy of a Special Occasion

    We used two hot Italian turkey sausage links, added 6 button mushrooms quartered, two sun dried tomatoes, a chopped pinch of both thyme and oregano, and a bunch of asparagus to the recipe. It was super delicious and the husband really loved it!

    I used a bulk mild Italian pork sausage. I think I should have drained it before adding the spinache and gnocchi as it seemed a bit greasy, I added more pasta water than recommended to cut the grease and it was very tasty. Will definately make again.

    This recipe is in regular rotation at our house, my husband loves it. I pretty much follow the recipe as written. Served with some crusty bread and a glass (or two!) of wine ... mmmm.

    Very good. Easy to make. I am going to try it with polenta as well.
