Ingredients
- 2 teaspoons olive oil
- 1 cup chopped onion
- 3/4 cup diced lean Canadian bacon (about 4 ounces)
- 1 teaspoon dried rubbed sage
- 1 teaspoon bottled minced roasted garlic
- 1/2 teaspoon dried oregano
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 (14.5-ounce) cans no-salt-added diced tomatoes
- 1 (16-ounce) box vacuum-packed gnocchi with potato (such as Bellino)
- 4 teaspoons grated Parmesan cheese
Preparation
- Heat oil in a large nonstick skillet over medium-high heat. Add onion, bacon, sage, garlic, and oregano; saute 4 minutes. Add sugar, pepper, and diced tomatoes, and reduce heat to medium. Cook sauce 10 minutes, stirring occasionally.
- Cook the gnocchi according to package directions, omitting salt. Divide the gnocchi evenly among 4 shallow bowls; top each with 3/4 cup sauce and 1 teaspoon cheese.
