Gül's Lentil Patties

  • 1 cup red lentils
  • 4 cups water
  • 2 tablespoons tomato paste
  • 1 cup uncooked bulgur wheat
  • 1 small onion, finely minced
  • 2 tablespoons olive oil
  • 1/8 teaspoon ground red pepper
  • 1/4 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/3 cup chopped fresh parsley
  • 1/4 cup fresh lemon juice
  • Romaine lettuce leaves
  • Lime wedges


  1. Cook lentils, uncovered, in water over medium-high heat 12 to 15 minutes or until tender (do not drain). Stir in tomato paste and bulgur; cover and let stand 20 minutes. Combine lentil mixture, onion, and next 8 ingredients.
  2. Form football-shaped patties, using a heaping tablespoon of mixture for each patty. Serve on romaine lettuce leaves with lime wedges.
