Rum-Glazed Sweet Potato Cakes

    Oh my! These were best while still warm, but so yummy even after a day when the flavors had a chance to blend. I used currants instead of raisins because that is what I had, and they were just fine. I also made half of the glaze with maple syrup instead of rum. This was almost as good but I liked the rum glaze better. If you choose to make the maple glaze, use it as quickly as possible because it will set, unlike the rum glaze.
