Gingered Pears

Crystallized ginger is ginger that has been cooked in a sugar syrup and coated with coarse sugar.

Ingredients

  • 2 teaspoons margarine or butter
  • 1 large firm ripe red pear, cut into eighths
  • 1 large firm ripe green pear, cut into eighths
  • 1 teaspoon grated orange rind
  • 1/4 cup orange juice
  • 1 tablespoon honey
  • 2 teaspoons finely chopped crystallized ginger

Preparation

1. Melt margarine in a nonstick skillet over medium heat. Add pear pieces; cook 2 to 3 minutes. Remove pear with a slotted spoon. Set aside, and keep warm.

2. Add orange rind and remaining 3 ingredients to skillet. Bring to a boil; cook 3 minutes or until mixture is reduced by half. Return pear to skillet, and cook until pear is tender.
