Gingered Orange Beets

Ingredients

  • 6 medium beets, peeled and sliced into 1/4-inch-thick slices (about 2 pounds)
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoons grated fresh ginger
  • 1/4 cup orange marmalade
  • 1 tablespoon orange juice

How to Make It

  1. Combine first 4 ingredients in a large bowl; toss gently. Set aside.

  2. Combine ginger, marmalade, and orange juice in a small bowl, stirring well. Set aside.

  3. Place beets in a single layer in a shallow roasting pan or jellyroll pan. Bake at 450° for 12 minutes.

  4. Remove beets from oven, and brush with ginger-orange mixture. Return to oven, and bake 10 to 12 additional minutes or until tender.
