Gingerbread

Yield 6 servings

Ingredients

  • 2 tablespoons butter or margarine, softened
  • 1/2 cup granulated sugar
  • 1/4 cup applesauce
  • 2 tablespoons molasses
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 tablespoon ground ginger
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup nonfat buttermilk
  • 2 egg whites
  • All Natural PAM Butter Flavor Cooking Spray
  • Garnishes: lemon curd, fresh mint sprigs

How to Make It

  1. Beat first 4 ingredients at medium speed with an electric mixer until blended.

  2. Combine flour and next 4 ingredients; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Add egg whites, and beat at medium speed 1 minute. Spray a 9-inch pieplate with cooking spray 5 seconds. Pour batter into pieplate.

  3. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Garnish, if desired.

  4. Note: Spray measuring spoon with cooking spray 1 second before measuring molasses.
