Ingredients
- 1 1/4 cups whole wheat pancake-and-waffle mix
- 1/3 cup chopped crystallized ginger
- 1 teaspoon ground ginger
- 1 cup whole milk
- 4 tablespoons honey
- 3 tablespoons olive or canola oil
- 1 large egg
- Strawberry-Maple Syrup
Preparation
- 1. Stir together first 3 ingredients in a medium bowl. Add milk and next 3 ingredients, stirring until smooth. Let stand 5 minutes.
- 2. Cook batter in a preheated, lightly greased waffle iron until crisp and brown. Serve immediately with Strawberry-Maple Syrup.
- Note: We tested with Aunt Jemima Whole Wheat Blend Pancake & Waffle mix.
- Note: Nutritional analysis includes about 2 3/4 Tbsp. syrup.
