Ingredients
- 1 1/4 cups low-fat honey graham cracker crumbs (9 sheets)
- 1/4 cup light butter, melted
- 2 tablespoons minced crystallized ginger
- 2 tablespoons granulated sugar
- Cooking spray
- 3 large eggs, lightly beaten
- 3/4 cup granulated sugar
- 2 teaspoons grated lime rind
- 1/3 cup fresh lime juice
- 3 tablespoons all-purpose flour
- 2 teaspoons grated peeled fresh ginger
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 teaspoons powdered sugar
Preparation
- Preheat oven to 350°.
- Combine first 4 ingredients in a mixing bowl; mix well. Press into an 8-inch square baking pan coated with cooking spray.
- Bake at 350° for 12 minutes; cool slightly on a wire rack.
- Whisk together eggs and next 7 ingredients until smooth. Pour egg mixture over prepared crust. Bake at 350° for 20 to 22 minutes or until set. Cool completely on wire rack. Sift powdered sugar evenly over top. Cut into bars.
