- 1 pound coarsely chopped peeled fresh ginger
- Place one-fourth of the ginger in a blender or food processor. Process until a fine paste forms, and remove from blender. Repeat the procedure with the remaining ginger. Place ginger paste in a fine sieve over a bowl, pressing with the back of a spoon to extract juice. Discard paste. Cover juice, and refrigerate.
