Ingredients
- 2 tablespoon(s) butter
- 1 whole(s) small-medium onion chopped
- 2 inch piece of fresh ginger diced
- 1 large garlic clove sliced
- 1 whole(s) medium butternut squash 2 inch cubes
- 2 whole(s) sweet apples peeled and cored
- 1 teaspoon(s) mild curry powder
- 1/2 cup(s) frozen apple juice undiluted
- 1/4 cup(s) light cream
- 4 cup(s) water or vegetable broth
Preparation
- Melt butter in a large pot
- Add onion and cook for about 2min
- Add ginger and garlic and cook for another 4 minutes
- Add curry powder and mix
- Add water or broth
- Add squash and apple
- Add apple juice
- Cover, bring to a boil, then cook on medium-low for 25 minutes (or when squash is soft)
- Puree soup in batches, put back in pot and add cream
