Ginger Beer

Yield Makes 5 cups

Ingredients

  • 1 quart water
  • 1 cup sugar
  • 1/3 cup grated fresh ginger
  • 1 1/2 teaspoons grated lime rind
  • 2 tablespoons fresh lime juice

How to Make It

  1. Combine all ingredients, stirring until sugar dissolves. Cover and chill 4 hours.

  2. Pour ginger mixture through a wire-mesh strainer into a large pitcher, discarding solids. Serve over crushed ice.
