1 (3-inch) piece fresh ginger, cut lengthwise into 4 pieces
1 cup uncooked basmati rice
1/4 cup chopped fresh cilantro
How to Make It
Combine chicken stock, coconut milk, salt, and ginger in a medium saucepan; bring to a boil. Add rice; bring to a simmer. Reduce heat to low, and cook 20 minutes or until rice is tender. Fluff with a fork, and stir in cilantro.
