It takes a lot for a meal to be Gilmore-approved, but these pancakes have done it. Bring on the Pop-Tarts AND the pancakes, because Lorelai wouldn't want you to have to decide. This stack is perfect for a lazy Saturday morning or a Gilmore Girl's viewing party.
2 1/4 cups all-purpose flour (9 5/8 ounces)
3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 1/4 cups whole milk
5 tablespoons unsalted butter, melted and cooled
2 large eggs
1 large egg yolk
1/2 teaspoon vanilla extract
Pop-Tarts, crumbled (use your favorite flavor)
maple syrup, warmed
How to Make It
Preheat a large griddle to medium heat.
Combine the flour, sugar, baking powder and salt in a large bowl stirring with a whisk.
Combine milk, butter, eggs and vanilla in a medium bowl stirring with a whisk. Add milk mixture to flour mixture; whisk until just combined.
Ladle 1/4 cup pancake batter onto griddle; sprinkle batter with with crumbled Pop Tarts. Cook for 4 to 5 minutes or until bubbles in the center of the pancakes begin to burst; flip pancake and cook an additional 2 to 3 minutes or until golden brown. Repeat process with remaining batter. Serve with warm maple syrup.
