Giblet Gravy

1/4 cup pan drippings from turkey or chicken
1/4 cup all-purpose flour
1 1/2 cups turkey or chicken broth
1/2 cup milk
1/4 cup chopped cooked giblets
2 hard-cooked eggs, chopped
1/4 teaspoon salt
1/8 teaspoon pepper


Heat pan drippings in a large skillet over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add broth and milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add giblets, eggs, salt, and pepper, stirring well.
