German Potato Salad

Yield 6 servings

  • 7 medium-size new potatoes
  • 3 slices bacon
  • 1 small onion, chopped
  • 1/2 cup water
  • 1/2 cup vinegar
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon salt

How to Make It

  1. Scrub potatoes. Cook in boiling water 30 minutes or until tender. Drain, and chill well. Peel and cut potatoes into thin slices.

  2. Cook bacon in a large skillet until done but still limp. Remove bacon, reserving drippings in skillet. Tear bacon into bite-size pieces; set aside.

  3. Sauté onion in bacon drippings until tender. Stir in remaining ingredients; cook over medium heat until slightly thickened. Add bacon and pour over potatoes. Toss gently.
