- 1 1/4 cups sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 eggs, separated
- 2 cups buttermilk
- 1/4 cup butter or margarine, melted
- 1/4 teaspoon cream of tartar
- 1 unbaked (10-inch) pastry shell
How to Make It
Combine sugar, flour, and salt in a large mixing bowl; stir well. Add egg yolks, buttermilk, and butter; beat well.
Beat egg whites (at room temperature) and cream of tartar until stiff peaks form. Fold into buttermilk mixture. Pour filling into pastry shell. Bake at 375° for 45 minutes or until a knife inserted in center comes out clean.
