Gazpacho--a chilled soup of pureed tomatoes, bell peppers, and onions--traditionally has breadcrumbs in the mixture. This quick and easy salad version of gazpacho has the vegetables, but not the bread.
Yield: 4 servings (serving size: about 1 cup)
1 cup thinly sliced peeled cucumber (about 1 medium)
3/4 cup chopped yellow bell pepper (about 1 small)
3 tablespoons Italian dressing
3 none ripe tomatoes, cut into wedges
2 none garlic cloves, crushed
1. Combine all ingredients in a medium bowl, stirring well. Serve immediately, or cover and chill up to 8 hours.
