Gazpacho--a chilled soup of pureed tomatoes, bell peppers, and onions--traditionally has breadcrumbs in the mixture. This quick and easy salad version of gazpacho has the vegetables, but not the bread.
1 cup thinly sliced peeled cucumber (about 1 medium)
3/4 cup chopped yellow bell pepper (about 1 small)
3 tablespoons Italian dressing
3 ripe tomatoes, cut into wedges
2 garlic cloves, crushed
How to Make It
Combine all ingredients in a medium bowl, stirring well. Serve immediately, or cover and chill up to 8 hours.
