been looking for a good baked fry recipe!! peeled mine, and cut thinner. also baked white potato with them, so used convection roast setting @ 400 with extra baking time. need to work on getting these crispier, but were good anyway.

- 4 medium sweet potatoes (about 1 1/2 lb.), cut lengthwise into thick wedges
- 1/4 cup olive oil
- 1 teaspoon salt
- 4 cloves garlic, finely chopped
- 1. Preheat oven to 400ºF. Place potatoes on a large baking sheet and toss with 3 Tbsp. olive oil and salt. Roast until browned, 30 to 40 minutes, turning over once halfway through baking time.
- 2. Combine garlic and remaining Tbsp. oil in a small bowl. Brush sweet potatoes with garlic and oil and roast until garlic is cooked, 2 to 3 minutes.
