Garlicky Bean Spread

Ingredients

1/3 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1/3 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
2 garlic cloves
1 teaspoon kosher salt
2 15-ounce cans cannellini or lima beans
1 baguette

Preparation

In a food processor fitted with a metal blade, combine the beans with the parsley, oil, lemon juice, garlic, and salt. Process until smooth. Serve with toasted baguette slices.
