Yield: Makes 1/2 cup
- 2 tablespoons Dijon mustard
- 2 tablespoons sherry vinegar or your favorite wine vinegar
- 1 garlic clove, minced
- 6 tablespoons olive oil
- Salt, to taste
- Freshly ground pepper, to taste
- Stir together first 3 ingredients in a small bowl. Slowly whisk in oil until well blended; add salt and pepper.
