Garlic Roasted New Potatoes w Fresh Rosemary

  • 3 pound(s) small red potatoes quartered


  1. 3lbs small red potatoes
  2. 1/2 c good olive oil
  3. 1 1/2 teas kosher salt
  4. 1 teas fresh ground pepper
  5. 2 tlbs minced garlic (I use from the jar)
  6. Fresh Rosemary coarsely chopped.
  7. Preheat oven to 400 degrees
  8. Cut potatoes in 1/2 or quaters depending on the size.
  9. Place in large bowl and tos with remaining ingred.
  10. Dump all on baking sheet and spread out into one layer.
  11. Roast in oven for about 1 hour or until browned and crisp.
  12. Flip twice w a spatula during cooking to ensure even cooking.
  13. Can make ahead and cover.
