Ingredients

  • 7 cups cubed peeled baking potatoes
  • 6 garlic cloves, peeled
  • 1/2 cup 2% low-fat milk
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons margarine
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Preparation

  1. Place potatoes and garlic in a saucepan. Cover with water; bring to a boil. Reduce heat. Simmer 20 minutes; drain. Return potatoes and garlic to pan. Add remaining ingredients; beat at medium speed of a mixer until smooth.
