Garlic Dressing

Yield 3 3/4 cups

Ingredients

  • 4 eggs
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 tablespoon vinegar
  • 1 tablespoon lemon juice
  • 1 2/3 cups vegetable oil
  • 4 hard-cooked eggs, finely chopped
  • 4 cloves garlic, minced
  • 5 sprigs fresh parsley
  • 4 green onions, chopped

How to Make It

  1. Place 4 eggs in container of an electric blender; process 5 seconds. Add salt, mustard, vinegar, and lemon juice; process an additional 5 seconds while adding oil in a thin, steady stream. Add hard-cooked eggs, garlic, parsley, and green onion; blend well. Cover and chill thoroughly
