Garlic Confit

Garlic and garlic oil that can be used for all sorts of things like salad dressing, pizza, pasta and more? Got from Bon Appetit May 2012, p. 50. Goes with Grilled Chicken Salad with garlic confit.

Ingredients

  • 20 clove(s) Garlic Peeled
  • 1 cup(s) Olive oil

Preparation

Put oil & garlic in small sauce pan on stove. Over medium low heat let come to simmer. As soon as simmering, turn heat down to low. Let simmer about 20 min until garlic is soft and golden brown. Cool completely. Strain through mesh strainer. Reserve cloves and oil separately.
