Garlic-Cheese Grits

Yield Makes 36 servings
These may be made about 1 hour before serving; they reheat perfectly over low heat.

  • 3 1/2 quarts water
  • 1 1/2 tablespoons salt
  • 4 cups uncooked regular grits
  • 5 garlic cloves, minced
  • 1 (2-pound) loaf process cheese spread, cubed
  • 1 cup half-and-half
  • 2/3 cup butter or margarine

How to Make It

  1. Bring water and salt to a boil in a large Dutch oven; gradually stir in grits and garlic. Cover, reduce heat, and simmer, stirring occasionally, 10 minutes.

  2. Add cheese, half-and-half, and butter; simmer, stirring constantly, until cheese and butter melt.
