This microwaveable side dish recipe is faster than tossing a salad and is a nice alternative to steamed veggies. It cooks quickly, so make it at the very end of dinner prep.
2 tablespoons light butter
2 teaspoons bottled minced garlic
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 (7-ounce) package fresh spinach (about 6 cups)
How to Make It
Combine first 4 ingredients in a 2-quart microwave-safe dish. Cover and microwave at HIGH 25 seconds or until butter melts. Add spinach; cover and microwave at HIGH 2 minutes or until spinach wilts. Serve immediately.
