Three words garlic, avocado, and tomato. Perfect for tapas or a great, heart-healthy snack.
1 (4-ounce) demi baguette, cut into 10 slices
1 garlic clove, halved
1 medium tomato, chopped
1/2 teaspoon red wine vinegar
1/4 teaspoon black pepper
1/8 teaspoon kosher salt
1 large ripe avocado, peeled and mashed
How to Make It
Preheat broiler to high.
Reserve 2 bread slices for Dinner Broil remaining bread 30 seconds on each side or until toasted. Rub bread with cut sides of garlic. Combine tomato, vinegar, pepper, and salt; let stand 5 minutes. Spread avocado evenly over toast; top with tomato mixture.
We like garlic so I just added the garlic clove - minced - in with the avocado and spread that on the toasted bread. Super easy and super good. We had it with Instant Black Bean Soup tonight (Oct 1999 Cooking Light). A perfect combo.
