Garden Tuna Sandwiches

Ingredients

  • 1 (6-ounce) can tuna in water, drained
  • 1/4 cup light mayonnaise
  • 2 tablespoons finely chopped celery
  • 2 tablespoons finely chopped onion
  • 1/2 tablespoon chopped fresh dill
  • 1/2 tablespoon Dijon mustard
  • 1/4 teaspoon grated lemon rind
  • 1/8 teaspoon pepper
  • 8 (1-ounce) slices whole wheat bread
  • 2 (3/4-ounce) slices fat-free Swiss cheese, halved diagonally
  • 1/4 cup shredded carrot
  • 16 thin slices cucumber (about 1 cucumber)
  • 4 green leaf lettuce leaves

How to Make It

  1. Combine first 8 ingredients in a medium bowl, stirring well.

  2. Spread 1/4 cup tuna mixture on each of 4 slices of bread. Top evenly with cheese slices, carrot, cucumber, and lettuce. Top with remaining bread slices, and cut in half.

  3. Tip: Eating tuna once or twice a week poses no health risk for healthy adults.
