This is by far my favourite cake! For best results, make the cake the day before and let it sit overnight with the jam and ganache on it, it keeps the cake moist and lets the jam seep into it. So good. I tend to make it as a layer cake and put jam in between the layers too. I usually make it with strawberry jam instead of raspberry, but that is just my taste.

My review is on the ganache only. I had made chocolate fluted muffins and needed a lower fat version ganache. This a fabulous, chocolaty and silky granache and definitely will make again. ....maybe with this cake recipe.
