  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 2 teaspoons grated lemon rind
  • 1 egg, lightly beaten
  • 3/4 cup plus 1 tablespoon nonfat buttermilk
  • 3 tablespoons vegetable oil
  • Vegetable cooking spray
  • Fruited Streusel Topping

How to Make It

  1. Combine first 6 ingredients in a medium bowl; make a well incenter of mixture. Combine egg, buttermilk, and oil; add to dry ingredients, stirring just until dry ingredients are moistened.

  2. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Sprinkle evenly with Fruited Streusel Topping. Bake at 400° for 15 minutes or until golden. Remove from pans immediately.
