Fruited Spinach Salad with Dried Cherry Vinaigrette

Ingredients

  • 1 (6-ounce) package baby spinach
  • 1 cup vertically sliced red onion
  • 1/2 cup coarsely chopped lightly salted cashews, toasted
  • 1/2 cup dried sweet cherries
  • 3 oranges, peeled, sectioned and coarsely chopped (about 2 cups)
  • Dried Cherry Vinegar
  • vinegar
  • 1 tablespoon honey
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Dried Cherry Vinegar

Preparation

Combine first 5 ingredients in a large bowl.

Combine Dried Cherry Vinegar and next 4 ingredients in a small bowl; stir with a whisk. Pour vinaigrette over salad; toss gently.
