Poached Fruit over Vanilla Frozen Yogurt

Yield Serves 6
Any unsweetened juice (such as apple or cherry) will work. We love a mix of dried plum, pear, and apple. Dried figs, apricots, and cherries would also be delicious.

Ingredients

  • 1 1/2 cups no-sugar-added cranberry juice
  • 1/8 teaspoon salt
  • 2 (3 x 1-inch) orange rind strips
  • 1 (8-ounce) package mixed dried fruit, coarsely chopped (about 1 1/2 cups)
  • 1 cinnamon stick
  • 3 cups vanilla frozen Greek yogurt
  • 1/4 cup slivered almonds, toasted
