Fruit Salsa

  • Yield: Makes 8 to 10 servings

Ingredients

  • 1 cup diced cantaloupe
  • 1 cup diced watermelon
  • 1 cup peeled, seeded, and diced cucumber
  • 4 large tomatoes, seeded and diced (about 2 1/2 cups)
  • 1/2 cup chopped red onion
  • 1/4 cup fresh lime juice
  • 3 tablespoons chopped fresh cilantro
  • 1 jalapeño pepper, minced (about 2 tablespoons)
  • 1 to 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • Tortilla chips

Preparation

Stir together first 10 ingredients in a bowl; cover and chill 1 hour. Serve with tortilla chips.
